This quick 5 minute chili will satisfy your comfort food craving whether it’s a cold school night or a night on the couch watching football. Meatless Monday? We’ve got you covered!
Quick Vegan Chili
2 tbsp vegetable oil
1 lb package of Smart Ground Original Veggie Crumbles
1 14.5 oz can Diced Chili Ready Tomatoes
1 16 oz can Dark Red Kidney Beans
Chili Spices to taste (chili powder, onion powder, garlic powder, pepper, seasoning salt, cayenne pepper)
Heat vegetable oil in a medium skillet at medium temp. Add smart ground. Since this is not real ground beef it only takes a few minutes to heat through. Add the tomatoes and kidney beans with liquids, do not rinse them. Mix together until fully incorporated. Then add spices to taste. I am pretty liberal with my seasonings but if you feel unsure you can substitute with McCormick’s Chili Seasoning Packs. Let simmer for 5 minutes and serve. Garnish with vegan sour cream, green onions, and vegan cheese if desired.
